Egg Masala Curry



Hi....!!!
Eggs are relished by my husband , egg curry being his favourite dish!I am also fond of them.
Eggs are high in protein and amazingly they are less in calorie, have antioxidants which help
fight aging!It is good for skin also so, I guess now we have all good reasons to include eggs
in our diet in any form.You can also try this amazing egg curry which I made yesterday!So
let us start.


SERVES:2

INGREDIENTS:

1.Eggs  3(boiled)
2.Onions 2(chopped)
3.Tomato 1(chopped)
4.Green chillies 1
5.Dry red chilli  1
6.Peas  1/2 cup
7.Ginger paste 1/2 tsp
8.Garlic paste   1tsp
9.Turmeric powder 1/2tsp
10.Coriander powder 1/2tsp
11.Jeera powder 1/2tsp
12.Garam masala 1/2tsp
13.Tomato sauce 1/2 tsp
14.Red chilli powder 1 tsp
15.Oil 3 tbsp
16.Fresh cream 1tsp
17.Dry fenugreek leaves  1 spoon
18.Salt to taste




Method :

1.Heat a pan with oil in it and when you see the oil is well heated, turn off burner.Add
   a pinch of turmeric powder ,1/2 tsp red chilli powder and a pinch of salt to the oil.Now
   add the boiled eggs to the oil and turn the gas on.Fry the eggs until they are golden brown.

2.Once the eggs are golden brown with crisp texture keep aside and let them cool down.

3.In this oil itself fry the chopped onions until they are light pink.Now add the chopped
   tomatoes and fry for a minute.Keep aside the fried onions and tomatoes and let it cool
   down.

4.When the onions and tomatoes have cooled down grind them to a fine paste
   in a mixer grinder.

5.Now in another pan/wok add oil ,heat it and add the dry red chilli
   along with the grined mixture of onions and tomato.
   Add the ginger garlic paste.
   Fry well till the color of the mixture changes to light brown.

6.Add the turmeric powder,jeera powder,coriander powder,garam masala,red chilli powder
   and the tomato sauce.
   Put  1/2 cup of water and keep cooking.

7.Add the green chilli and the peas.Bring the mixture to a boil.We get a nice aroma which
   signifies that the curry is almost done.

8.We add the dry fenugreek leaves and now place two eggs (which have now cooled down)into
   the curry.Cover the curry with a lid for about five minutes.

9.Lastly in a mixer grinder we add the third egg along with the cream and we blend well.
   The result is a creamy mixture.We add this to the curry and mix well.

10.Your Egg curry is done.Serve with rice.

TIPS:
1.We use the same oil to fry the onions and tomato as the one used for frying the egg
   so that the taste of the curry gets enhanced.
2.Try to use fresh ginger and garlic paste for better aroma and taste.
3.Make slight incision in the two boiled eggs so that the eggs attain the flavor of the curry.







I know the recipe may seem time taking but I promise it is delicious.
